Featuring natvie Australian Mountain Pepperberry (Tasmannia lanceolata) which grows naturally in the cool climates and forests of Tasmania, southern Victoria and New South Wales.

Tasting notes:

The mousse quickly dissipates leaving scattered bubbles appearing at a consistent rate.

Subtle spice and white pepper notes greet you on the nose and the red fruits are reminiscent of raspberry coulis that would accompany a dessert.  A floral mid palate with hints of juicy tartness follows.

The palate is dry, despite the perceived sweetness coming from concentrated berry flavours.  Raspberries dominate on the palate – a mixture of fresh and raspberry coulis.  The flavour tapers away which highlights the spice and pepper notes on the finish.
